Maftoul, a large grain couscous, is made by village women for feasts and celebrations. Women work together all day to prepare this festive dish.
Best enjoyed: Served as a side dish, in a salad, or as part of a main course.
Ingredients: Bulgur grain, ground whole wheat, water, salt, and ground cumin.
